Making Vegetable Casseroles with Home Grown Vegetables

For anyone with a well stocked vegetable garden, the making of vegetable casseroles in the winter months can be a quick economical and nutritious meal. There are plenty of vegetable recipes around, but with a vegetable casserole, you often don’t need a recipe.

When you are thinking about planting a garden in the spring, give some thought as to the kinds of vegetables that will make the best kind of meals. You might like growing artichokes, but if your vegetable garden is intended to stretch the family budget that little bit further, then it could be that the land would be better used for root crops – there’s nothing stopping you from growing a few artichoke seeds, just not over the entire vegetable patch! Vegetable garden planting needs to be done keeping the kitchen recipes in mind!

Simple Vegetable Meals

Cooking with vegetables make quick meals, and those which have been grown in your own vegetable gardens should be packed full of vitamins. They make not look so pretty coming out of the soil, but by the time the vegetables are cleaned, peeled and cut for the freezer, they won’t look much different from the store bought vegetables. They will however taste all the better for the fact you’ve nurtured them from the time the seeds arrived from the seed companies.

Cook a vegetable casserole by adding the prepared vegetables of your choice to a pan with some water. Allow them to cook slowly. Remove the water when almost cooked, add it to some stock either from the meat you’re cooking, or from stock cube. If you’re vegetarian, use vegetable stock. Return to the vegetables, add meat if required, season to taste and then add any gravy or other sauce. Your casserole is done. Soups are another easy cook vegetable feast on cold wintry days.
