Fresh Vegetable Beef Soup Recipes

There’s nothing better than a bowl of soup packed full of savory beef and fresh vegetables. And if you have your own garden, the soup will be all the better. Vegetable & beef soup recipes are a dime a dozen, but if you have your own vegetable garden, and follow our guidelines below, you’ll have a soup that’ll make you famous!

Any fresh, home-grown garden vegetable can be put into beef soup. And we mean any. No matter how obscure. In fact, the more bizarre, the better! Vegetable and beef soups are so common that anything which sets a soup apart will make it memorable. Try artichokes, asparagus, or brussels sprouts! Squashes also make superb veggie and beef soup but aren’t included in many recipes. We like to use soft squashes in summer and hard squashes in autumn and spring.

Go out into your garden and glean the most unique combination of vegetables you can think of. Wash, peel, and chop the veggies according to your preference, but keep them sorted by hardness.

The Big Secret

The secret to a perfect soup is to cook each vegetable individually until it reaches the perfect consistency: still just a bit crisp, and just under-done. Then strain it from the soup broth and chill it in an ice bath to halt the cooking. Keep the cooked veggies in the fridge until the rest of the soup is ready to serve. Add them back to the soup 10 minutes before ladling it into bowls and taking it to the table.
