Delicious Vegetable Beef Soup Recipe

Soup is the perfect food, plain and simple. Packed with delicious, nutritious ingredients, you can never go wrong with soup. Check out our fantastic vegetable beef soup recipe.

A vegetable slicer will dramatically reduce the preparation time for this complex soup. When making vegetable soups, it is critical that all the vegetables be cooked perfectly: not too raw, but not overcooked. For this reason, each vegetable needs to be sliced uniformly. Slicing them with a special slicer makes accurate, fast cuts and saves your fingers from the sharp blade of a knife!

Wash and peel the vegetables you’ve selected. In winter and autumn, we use hard squashes, turnips, rutabagas, cauliflower, parsnips, dried peppers, canned tomatoes, and sweet potatoes. We slice them thick for hearty soups. A heavy-duty slicer may be needed for the hard squashes. In spring and summer we use carrots, celery, zucchini, broccoli, fresh poblano and anaheim peppers, fresh tomatoes, and red potatoes. We slice them thinner in these seasons, and, again, a slicer makes things quick, easy, safe, and most important: accurate!

The Secret

Bring 8 cups or more of stock (beef, chicken, or vegetable) to a boil. We cook each vegetable separately until perfectly done, then remove with a strainer and cool in an ice bath to stop the cooking. Then we refrigerate all the cooked veggies until the soup is ready to serve. (Peppers and tomatoes remain in the stock.) It’s labor intensive, but it makes all the difference!

Brown a pound of lean ground beef with two chopped onions and ten cloves of garlic, smashed or sliced. Salt and pepper generously. If any fat remains in the pan, drain it off.

Add the beef to the stock and season liberally with your favorite herbs. Add cup of wine, vermouth, or vodka. The alcohol extracts flavors from the veggies that are not water-soluble. Season with salt, pepper, and lemon juice; bring to a boil, and simmer covered for at least 30 minutes. Add the cooked, sliced vegetables 5 minutes before serving.
