Of course, on a broader scale, you don’t want to use up many potatoes this way. Remember, the original idea of growing potatoes is to be able to eat them. But, there’s yet another way how to grow potatoes— just as easy! You ‘chit’ them. No it’s not a misspelling. To chit seed potatoes, let’s say, is to plant potato seeds in tiny containers, like the compartments of empty egg trays. Yes, potatoes do grow from seed no bigger than a flyspeck. In time, each little seeded cubicle yields its own potato mini-plant and soon will be ready for transplanting. This versatile, well-endowed potato has yet another way of reproducing. A term used only peculiar to potatoes—the “set.” And just as the name implies, the “set” takes two to tango. One, being the eye of a potato, and two, some of the fleshy part surrounding the eye. Seed companies sell this entire ensemble in packets, usually fifty potato sets to each packet and shipped just prior to planting time. The time for planting potatoes varies according to the planting zones you live in. Potato sets are best-planted in March and April. Dig a little deeper for them though.
