Freezing Potatoes - A Little Work Now for a Lot of Ease Later OnJust as you buy frozen spuds, sliced, diced, shredded and already greased up, so too can you take to your own freezing potatoes. When planting potatoes you realize that the tuber is a unique item in the earth. The plant grows out of the sun, in the dirt - it is more like planting a root bulb when you think of it. The starches in the potato are why you have to be careful when you go to freeze them. You will have to rinse the potatoes with lots of water or par boil the potatoes to avoid the potatoes from getting that brownish color. Any shape and size can be frozen and easily used as quick potato sides, which makes having planted them such a pleasure. Fresh plants are always the best for potato freezing. If you choose to freeze your potatoes as hash browns, grate the potatoes with a grater or a food processor and rinse them with lots of water to avoid the potatoes from turning brown from the potato starch. Lay them out on wax paper in either 1/2 inch to 3/4 inch thickness in any baking pan or cookie sheet, or even on sturdy tin foil with a wax paper lining to ensure no stick. If you use lots of butter, and butter the tin foil, that should work to avoid sticking. Favorites to Add to Potato FlavorOther potato-added favorites can be included such as bacon bits or onions and black pepper. Make crease lines so they can be snapped apart when they're frozen and you go to grab a meal portion. Another way to freeze the freshly grown potatoes is to cut them into French fries or as patties. Cut them into the shape you choose, then cook them. You can cook the potatoes in the oven or boil the potatoes, but the idea is to make sure the potatoes are at least partially cooked before freezing. |
