Freezing Peppers Keeps the Flavor

When freezing peppers, you will not need to go to a great deal of difficulty to do so. If you are growing peppers, they will be much more nutritious than the peppers you would buy commercially. Choosing organic growing methods is also a great way to ensure high quality in nutrients, in fact, nearly doubling the nutrient value of your peppers grown in your own vegetable gardens.

Different varieties of peppers grow well, as do any well maintained garden plants. You can find your hot pepper seeds or other vegetable seeds in any garden catalogs. The different varieties are excellent for cooking. Hot peppers add a great spice and fever to Italian and Mexican dishes. Red and green bell pepper also have a tangy flavor that give a unique twist to many pepper recipes. Frozen peppers do retain a great percentage of their nutrients.

The Actual Freezing Process

Freezing the peppers for making cooked dishes later on is simple. Choose only the peppers that seem to be excellent, without any blemishes. Wash the peppers before freezing. Cut the peppers so that you can remove the stem and the pepper seeds inside. This may be done by cutting a circle around the stem of the pepper and then pulling the stem out. If you're lucky, the whole center with seeds and all will lift right out.

Rinse out the seeds. Otherwise, a slice along the side of the pepper makes it just as easy to dissect the pepper horizontally. Bring a pot of water to a very rapid boil, then place the peppers in quickly. One minute, to blanch them, then take them out. Dry them well with a cloth.

Pack the peppers into containers or plastic baggies with the zipper seal. Be sure that there is no air in the baggies. Then, all there is to do is freeze them. If you plan to use them raw, just freeze them in anything that the peppers won't catch freezer burn in.
